INGREDIENTS

  • 300 g English cucumber
  • 200 g white Greek yogurt
  • 1 peeled clove of garlic
  • 1 tablespoon finely chopped dill
  • 1 tablespoon lemon juice
  • 3 tablespoons extra virgin olive oil
  • 1 teaspoon salt

    Cut the garlic lengthwise and remove the tough germ, which you discard. Finely chop the garlic.

    Cut off both ends of the cucumber and slice it lengthwise. Scoop out the seeds with a spoon and coarsely grate the cucumber. Place it in a colander, set the colander over a bowl, and salt the cucumber. Stir and let stand for 10 minutes; the cucumber will release water.

    Squeeze out the drained cucumber, mix it in a bowl with yogurt, garlic, dill, lemon juice, and olive oil. Chill in the refrigerator for 2 hours. Stir before serving.
