INGREDIENTS

  • 2 tablespoons of olive oil
  • 300 g of chicken breasts
  • 70 g of white onion (finely chopped)
  • 1 tablespoon of brown sugar
  • 500 g of peeled chopped tomatoes
  • 1 teaspoon of dried oregano
  • 150 g of mozzarella (sliced)
  • 70 g of grated Parmesan

INSTRUCTIONS

    First, preheat the oven to 200–210 °C and prepare a baking dish (30 × 40) cm.

    Wash, clean, salt, and pepper the chicken breasts. Heat 1 tablespoon of olive oil in a pan over medium heat. Once the oil is hot, place the chicken breasts in the pan and fry each side for 2–3 minutes over medium heat. Remove the fried chicken breasts from the pan and set aside on a work surface.

    Pour the second tablespoon of oil into the pan, add finely chopped onion, and fry over medium heat for 2 minutes. Then reduce the heat to low, add brown sugar, tomatoes, dried oregano, salt, and pepper, and simmer everything together for 3–4 minutes.

    Transfer the finished tomato mixture to the baking dish. Place the fried chicken breasts on the mixture, add slices of mozzarella, and sprinkle everything with grated Parmesan. Place the baking dish in the preheated oven and bake for 13–15 minutes at 200–210 °C.

    Divide the finished Parmesan chicken into 3 plates and serve with any side dish.
