INGREDIENTS

  • 350 g tomatoes
  • 80 g peeled red onion
  • 80 g olive oil
  • 30 ml red wine vinegar
  • 20 ml lemon juice
  • 2 cloves garlic
  • red chili pepper to taste
  • 1 tbsp finely chopped flat-leaf parsley
  • 1 tbsp finely chopped basil
  • 1 tsp finely chopped thyme
  • 1 tsp salt

Instructions

    Finely chop the onion. Peel the garlic, cut it lengthwise, remove the germ, and finely grate or press it. Finely chop the chili pepper.

    Cut the tomatoes into quarters and remove the tough core including the seeds. Dice the flesh into small cubes.

    Mix the onion with vinegar, lemon juice, and garlic. Add the chopped tomatoes, herbs, and oil.

    Add salt and chili pepper to taste and mix.
