  • 2 grain baguettes
  • 300 g chicken breasts
  • 1 large bell pepper or 2 smaller ones
  • 2 eggs
  • Mixed leaf salad
  • Salt
  • Pepper
  • Ketchup with reduced sugar or sweetened with stevia
  • Olive oil

INSTRUCTIONS

    Cut the bell peppers in half and remove the seeds. Place them on a baking sheet skin-side up, drizzle with olive oil, and bake for 20 minutes at 220 °C. Transfer the roasted bell peppers to a bowl and cover with plastic wrap. After five minutes, uncover and remove the skin from the bell peppers. Cut the bell peppers into smaller pieces.

    Season the chicken breasts with salt and pepper and pan-fry them in a non-stick pan over medium heat. Fry for approximately 15 - 20 minutes, turning the meat several times. Once the breasts are cooked through, set them aside to rest. Then slice them.

    Boil the eggs hard. This takes approximately 9 minutes. Cool the eggs in cold water and peel them.

    Assembly: Slice the baguettes open and spread with ketchup. Layer with lettuce leaves, then slices of chicken breast, sliced hard-boiled egg, and pieces of roasted bell pepper.
