FOOD PAIRING WITH BEER
- This dish is best enjoyed with a glass of well-chilled beer.
INSTRUCTIONS
- 1Cut the meat into 1 cm thick slices and lightly pound them. Make 4 cuts around the perimeter, 0.5 cm deep, then salt and pepper both sides.
- 2Finely chop the onion. Halve the apricots. Cut the apples into 1 cm thick slices.
- 3Heat oil in a pot over high heat and gradually brown the meat slices on both sides until golden. Remove to a plate.
- 4Reduce heat to medium, add the onion, and sauté, stirring frequently, until light golden. Add rosemary, ginger, cloves, nutmeg, 1 teaspoon of pepper, and stir for 1 minute. Add apricots and cider, bring to a boil, and cook for 2 minutes. Pour in apple juice and lemon juice, season with 1 teaspoon of salt, and bring to a boil. Add the browned meat, cover with a lid, reduce heat to low, and simmer for 1.5 hours. Add the sliced apples and simmer for another 30 minutes. Season with salt as needed.
