MEAT PREPARATION
Finely chop the garlic and onion.
Crumble the cheese roughly by hand and set aside. Cut the chili pepper lengthwise, remove the seeds, and finely chop the flesh. Finely chop the olives.
Except for the cheese, mix all ingredients together in a bowl and refrigerate for 20 minutes. Then divide the seasoned meat into 8 portions and form each into a flat patty.
Chef's tip
You can roughly blend the olives, spring onion, chili pepper, a tablespoon of lemon juice, olive oil, and a pinch of salt and pepper with an immersion blender, then mix with the diced cucumber, dill, and lemon zest. Season the salsa with a few drops of lemon juice, or salt if needed. To taste, you can use less chili pepper, or omit it entirely.
