INGREDIENTS FOR GALETTES AND FILLING
- 200 g buckwheat flour
- 50 g all-purpose flour
- 2 eggs (1 for the batter, 1 for the filling)
- 1 tablespoon vegetable oil and oil for frying
- pinch of salt (for the batter and for the filling)
- 1 slice of ham
- 20 g Gruyère cheese
- pinch of freshly ground pepper
INSTRUCTIONS
- 1Pour both flours into a bowl, add 250 ml of water, mix, add the egg and mix. Pour in another 250 ml of water, mix in salt and oil, and let the dough rest at room temperature for 2 hours.
- 2Cut the slice of ham into 4 equally sized strips, grate the cheese.
- 3Heat a pan over medium heat, add 1/2 tablespoon of oil, and pour in a ladleful of batter. Tilt the pan to spread the batter very thinly.
- 4Fry the galette on one side until golden. Flip it over and crack an egg into the center. Season it with salt and pepper, and arrange ham around it on four sides, then sprinkle with cheese.
- 5Fold the sides of the galette towards the egg so that the egg is not covered, and carefully transfer it to a plate.
Tip
For frying, you will need a non-stick pan with a diameter of 28 cm.
For preparation, you will need a spatula for flipping galettes.
