INGREDIENTS

  • 400 g tagliatelle
  • 1 large organic lemon
  • 4 large cloves of garlic
  • 100 g grated Parmesan
  • 50 g grated pecorino
  • 3 tablespoons olive oil
  • Handful of fresh basil
  • 1 chili pepper
  • Salt
  • Freshly ground pepper
  • Arugula

INSTRUCTIONS

    Cook the pasta in salted water according to package directions until al dente.

    Heat olive oil in a pan over medium heat. Add chopped garlic and chili pepper and sauté lightly until fragrant but not browned.

    Finely grate the zest from the lemon, then squeeze out the juice. Add the juice to the pan and pour in about 3 tablespoons of the reserved pasta water. Then add the pasta and mix together with the lemon zest.

    Sprinkle Parmesan cheese over the hot pasta. Add chopped basil, season with salt and pepper.

    On the plate, sprinkle with grated pecorino in larger flakes and fresh arugula.
