INGREDIENTS
- 400 g tagliatelle
- 1 large organic lemon
- 4 large cloves of garlic
- 100 g grated Parmesan
- 50 g grated pecorino
- 3 tablespoons olive oil
- Handful of fresh basil
- 1 chili pepper
- Salt
- Freshly ground pepper
- Arugula
INSTRUCTIONS
- 1Cook the pasta in salted water according to package directions until al dente.
- 2Heat olive oil in a pan over medium heat. Add chopped garlic and chili pepper and sauté lightly until fragrant but not browned.
- 3Finely grate the zest from the lemon, then squeeze out the juice. Add the juice to the pan and pour in about 3 tablespoons of the reserved pasta water. Then add the pasta and mix together with the lemon zest.
- 4Sprinkle Parmesan cheese over the hot pasta. Add chopped basil, season with salt and pepper.
- 5On the plate, sprinkle with grated pecorino in larger flakes and fresh arugula.
