INGREDIENTS

- Olive oil
- 300 g chicken (thigh) meat, cut into strips
- 300 g whole grain rice
INSTRUCTIONS
- 1Peel and finely chop the garlic. Squeeze the juice from the lime. In a bowl, mix the chicken with 1 tablespoon of (olive) oil, 2 tablespoons of spice blend, lime juice, and 1/3 clove of garlic. Let the chicken marinate.
- 2Clean the vegetables. Peel the onion and the remaining garlic, chop the onion, and finely chop the garlic.
- 3Cut the red bell pepper in half. Remove seeds if necessary. Cut the zucchini in half and slice into half-moons. Dice the bell peppers and tomatoes. Cook the rice according to package instructions.
- 4Meanwhile, heat 2 tablespoons of (olive) oil in a pan and sauté the onion, remaining garlic, chili peppers (to taste), zucchini, and bell pepper over medium heat for 5–6 minutes. Add the tomatoes, the rest of the spice blend, and 50 ml of water. Cover and simmer over low heat for 5 minutes.
- 5While the vegetables are simmering, heat 1 tablespoon of (olive) oil in another pan and fry the chicken according to package instructions until golden brown and perfectly cooked.
- 6Serve with rice, sautéed vegetables, and piri-piri chicken.
