INGREDIENTS

  • 8 pcs wheat tortillas
  • 200 g wood-smoked bacon
  • 1 pc red onion
  • 8 pcs size M eggs
  • 200 g Cheddar cheese
  • 1 handful fresh coriander
  • 500 g cherry tomatoes
  • 4 leaves lettuce
  • 2 tbsp Jalapeño
  • 3 tbsp Mexican salsa
  • 200 g beans in mildly salted brine seasoning - Mexican mix
  • Olive oil
  • Salt
  • Freshly ground black pepper

INSTRUCTIONS

    First, prepare the ingredients. Cut the bacon into small pieces. Peel the red onion and chop it finely. Halve or quarter the cherry tomatoes, depending on their size. Grate the Cheddar cheese. Finely chop the fresh coriander. Cut the jalapeño into small pieces.

    Heat a pan and fry the bacon until crispy. Whisk the eggs, season with salt and pepper. Remove half of the bacon and make an omelette from half of the eggs, finally sprinkling with some Cheddar. Then make the second omelette. This is so that the omelette is not too thick. Finally, cut the omelettes into strips.

    Mix the tomatoes with olive oil, onion, and coriander. Season with salt and pepper. Mix the beans with Mexican salsa.

    Fill the tortillas with torn lettuce, add the tomato and bean mixture, egg omelette, jalapeño to taste, and sprinkle with more Cheddar. Roll up the tortillas and bake, preferably on a contact grill.
