INGREDIENTS

  • 1 onion
  • 1 carrot
  • 2 cloves of garlic
  • 1 can of red beans
  • 3 tablespoons of tomato paste
  • 1 teaspoon of ground paprika
  • 1 teaspoon of oregano
  • ½ teaspoon of ground chili
  • Pinch of salt
  • 1 tablespoon of oil
  • 2 large tortillas
  • 1 pc avocado
  • Juice from 1/2 lemon
  • 2 handfuls of lettuce
  • 1 large tomato

INSTRUCTIONS

    Clean the vegetables. Finely chop the onion and garlic. Dice the carrot into small cubes.

    Pour oil into a pan and sauté the prepared vegetables over medium heat. Then add tomato paste and spices, mix. Add the rinsed beans and partially mash them with a wooden spoon. Season with salt, mix, and let it heat through.

    Halve the avocado, remove the pit and skin, and mash with a fork. Add the juice from half a lemon and season with salt and pepper. Mix.

    Place torn or chopped lettuce, bean mixture, mashed avocado, and sliced tomatoes on a tortilla. Carefully wrap and pan-fry the burrito on both sides.
