INGREDIENTS
- 100 g dried pitted dates (soaked in water overnight)
- 50 ml rapeseed oil
- 200 g whole oat flakes (gluten-free)
- 40 g shelled sunflower seeds
- 400 g mixed frozen forest fruit
- 2 medium ripe bananas (2× approx. 90 g without peel)
INSTRUCTIONS
- 1Preheat the oven to 180 °C, prepare a baking sheet and line it with baking paper.
- 2Drain the soaked dates and place them in a tall container. Add the oil and blend into a smooth paste. Then transfer the date paste to a medium-sized bowl, add the flakes and sunflower seeds, and mix.
- 3Spread the mixture onto the prepared baking sheet and bake until golden brown for 25–30 minutes at 180–185 °C. After 10 and 20 minutes of baking, turn the granola. So, you will turn it twice in total. For the last 5–10 minutes, check the mixture and turn it if necessary. After removing it from the oven, let it cool for at least 20 minutes.
- 4While the granola is baking, place the forest fruit in a medium saucepan and bring to a boil. Then reduce the heat to low and cook for 8–10 minutes. Meanwhile, mash the bananas, and after the specified time, add them to the forest fruit and cook for another 5 minutes or until desired consistency. If the mixture is too thick, add a little water. After cooking, let the fruit cool for at least 15 minutes.
- 5Serve the granola with stewed fruit.
