Ingredients
- 2 tablespoons olive oil
- 500 g chicken breasts
- 1 onion
- 3 bay leaves
- 5 g thyme
- 1 teaspoon oregano
- 10 g parsley
- 3 cloves garlic
- 800 g chopped tomatoes
- 1 tablespoon cane sugar
- 500 g whole wheat gnocchi
- 40 g Parmesan
- Fresh basil
- Salt
- Pepper
Instructions
- 1In a large pan, heat the oil over low heat. Then increase the heat to medium-high, add the chicken breasts and sauté for 7–8 minutes until the meat is seared. Then reduce the heat to medium, remove the chicken from the pan, add the onion and sauté for 5–6 minutes. Then add the bay leaves, thyme, oregano, parsley, and garlic. Sauté for 1–2 minutes, then pour in the tomatoes. Do not discard the cans; fill them with water and pour it into the pan.
- 2Cook the tomato mixture for about 15 minutes over high heat. Then reduce the heat to medium, add the chicken and sugar, and cook for another 5 minutes. Next, add the gnocchi, Parmesan, salt, and pepper, and cook for 8–10 minutes (or according to package directions), stirring occasionally to prevent the gnocchi from sticking to the bottom of the pot.
- 3Before serving, sprinkle with finely chopped fresh basil.
