INGREDIENTS

  • 800 g cooked jasmine rice
  • 3 eggs
  • 2 tablespoons fish sauce
  • 2 tablespoons soy sauce
  • 2 shallots
  • 1 clove of garlic
  • 2 carrots
  • 1 pak choi
  • Spring onion
  • Handful of coriander
  • White sesame for garnish
  • 2 tablespoons sesame oil
  • Salt
  • Pepper

INSTRUCTIONS

    Cook the rice according to the instructions. For fried rice, day-old rice is suitable. Finely chop the shallot and garlic. Clean the carrots and pak choi and cut them into thin, long (julienne) strips. Chop the spring onion into smaller pieces.

    Heat a pan, add oil, shallot, and garlic, and sauté until translucent. Add the eggs, fry for a moment and scramble, then add the cooked rice, fish sauce, soy sauce, and fry for 5 minutes until the rice turns golden brown.

    Add carrots, pak choi, and spring onion at the end and sauté for another 2 minutes. Season with salt and pepper. Garnish the fried rice with sesame seeds and coriander.
