- 2 packs of udon noodles
- 2 finely chopped shallots
- 2 cloves of finely chopped garlic
- ½ chili pepper
- 2 carrots cut into thin long (julienne) strips
- 100 g of green beans
- 400 g of shrimp
- A handful of coriander
- 2 tablespoons of sesame oil
- White sesame seeds for garnish
INGREDIENTS FOR THE SAUCE
- 4 tablespoons of dark soy sauce
- 4 tablespoons of cane sugar
- 4 tablespoons of oyster sauce
- 2 tablespoons of lime juice

INSTRUCTIONS
- 1Heat sesame oil in a wok or pan, add finely chopped shallots, garlic, and chili. Then add the shrimp and sauté for about 3 minutes.
- 2Meanwhile, prepare the sauce by mixing all the necessary ingredients and stirring.
- 3Add sliced carrots and green beans to the pan, pour in the prepared sauce, and sauté for 2 minutes.
- 4Finally, add the udon noodles. The noodles are already cooked, so they only need to be heated in the pan for a minute. Mix everything together and serve.
Tip
You can replace the lime juice in the sauce with the same amount of rice vinegar.
