Ingredients
- 200 g salad cucumber
- 200 g tomatoes
- 100 g feta cheese
- 40 g olives
- 15 g peeled red onion
- 50 ml extra virgin olive oil
- 1 red bell pepper
- juice of ½ lemon
- 3 sprigs of oregano
- freshly ground pepper
- 1 level teaspoon of salt
Instructions
- 1Cut the bell pepper in half, remove the core, and cut the flesh into 2 cm pieces.
- 2Cut the cucumber lengthwise, then cut both halves lengthwise again. Cut into 2 cm long pieces.
- 3Remove and discard the tough core from the tomatoes, then cut the tomatoes into 2 cm pieces.
- 4Slice the onion into thin wedges. Strip the oregano leaves from the sprig and finely chop them. Cut the cheese into 1 cm cubes.
- 5Pour lemon juice into a bowl, add salt, a pinch of pepper, and whisk in the olive oil. Add the chopped vegetables, olives, cheese, and oregano to the bowl. Mix well and serve immediately.
