Ingredients

  • 200 g salad cucumber
  • 200 g tomatoes
  • 100 g feta cheese
  • 40 g olives
  • 15 g peeled red onion
  • 50 ml extra virgin olive oil
  • 1 red bell pepper
  • juice of ½ lemon
  • 3 sprigs of oregano
  • freshly ground pepper
  • 1 level teaspoon of salt

Instructions

    Cut the bell pepper in half, remove the core, and cut the flesh into 2 cm pieces.

    Cut the cucumber lengthwise, then cut both halves lengthwise again. Cut into 2 cm long pieces.

    Remove and discard the tough core from the tomatoes, then cut the tomatoes into 2 cm pieces.

    Slice the onion into thin wedges. Strip the oregano leaves from the sprig and finely chop them. Cut the cheese into 1 cm cubes.

    Pour lemon juice into a bowl, add salt, a pinch of pepper, and whisk in the olive oil. Add the chopped vegetables, olives, cheese, and oregano to the bowl. Mix well and serve immediately.
