- 1 teaspoon fresh mint
- 50 g radishes
- 30 g celery stalk
- 20 g spring onion
- 2 slices whole grain bread
- 2 eggs

INSTRUCTIONS
- 1Remove the skin and pit from the avocado and cut it into cubes. Slice the radishes and cut the celery into cubes. Coarsely chop the mint and finely chop the onion. Then mix all the prepared ingredients in a bowl. Season the mixture with salt and pepper. Place the bowl with the mixture in the refrigerator for now.
- 2Finally, prepare fried eggs – just crack both eggs onto a heated pan and cover with a lid (preferably transparent) for about 5 minutes. Cook the eggs until the whites are completely cooked. Cook the yolk to your liking – after 5 minutes under the lid it will be runny, and after about another 3 minutes it should be fully cooked and suitable for children.
- 3Prepare 2 slices of whole grain bread, which you can toast in a pan or put in a toaster for a while.
