- 2 tablespoons olive oil
- 2 cloves of garlic
- 700 ml vegetable broth
- florets from 1 medium head of broccoli
- 1 egg

INSTRUCTIONS
- 1Peel and finely chop the onion. Heat 2 tablespoons of olive oil in a pot, add the chopped onion and fry it for about 5 minutes over medium heat. Meanwhile, crush the garlic, and after the indicated time, add it to the pot and fry everything for another 1 minute. Then pour the vegetable broth into the pot, add the broccoli florets, and cook everything over medium heat for 10–15 minutes.
- 2Season the cooked soup with salt and pepper, remove the pot from the heat, crack an egg into it, and immediately blend the entire contents of the pot with an immersion blender.
- 3Divide the finished soup into serving bowls and serve.

2 slices of whole grain toast into cubes and toast them
golden brown in a dry pan over medium heat (this will take
approximately 8–10 minutes).
