PESTO

  • 1 large bunch of carrot or parsley tops
  • 50 g walnuts or pine nuts
  • 1 clove of garlic
  • 50 g grated Parmesan
  • Pinch of salt
  • Pinch of ground black pepper
  • Extra virgin olive oil

Instructions

    Thoroughly wash and dry the vegetable tops (carrot or parsley) and remove tough stems. Roughly chop the leaves.

    You can briefly toast the nuts (walnuts or pine nuts) in a dry pan for a more intense flavor. Peel the garlic.

    Place all ingredients (tops, nuts, garlic, Parmesan) into a blender or mortar. Gradually add olive oil and blend or crush until the desired paste consistency is achieved.

    Season the finished pesto with salt and pepper. If it's too thick, add a little more oil. Serve with pasta or on a baguette.
