Cut the sea bass fillets across the grain into individual portions.

Place a portion of rice in the palm of your right hand. Using your index finger, take some wasabi paste and spread it on a slice of fish. Place the rice on the fish and shape the fish around it. Garnish with thin slices of lime.

Dip individual pieces of nigiri sushi into soy sauce flavored with wasabi paste and eat with pickled ginger.
