Preparation method
Preheat the oven to 180 °C. Line a baking sheet with parchment paper.
Finely grate the ginger. Whisk sugar, egg yolks, and eggs until foamy. Then add flour, ginger with its juice, butter, and mix until smooth. Fill a piping bag with the mixture and pipe full circles onto the baking sheet lined with parchment paper.
Place in the preheated oven and bake for 12 minutes until golden.
Chef's tip
For a better aroma and taste, use fresh ginger, not dried. You will need a piping bag for preparation. You can also use a piping bag with a star tip; the pattern will then be slightly visible on the gingerbread cookies after baking. Let the gingerbread cookies rest in a box.
