Preparation method
ALMOND FILLING PROCEDURE
Whisk the egg and mix with the other ingredients in a bowl to form a smooth dough. Shape it into a 20 cm long roll, wrap it in cling film, and let it rest in the refrigerator for 2 hours until firm.
DOUGH PROCEDURE
Place sultanas and cranberries in a saucepan without oil and heat over medium heat, stirring constantly, for 3–4 minutes. Remove from heat and pour in the rum.
Prepare the dough using the starter method (omládek): pour flour into a bowl, make a well in the center, pour in 2/3 of the milk, and crumble in the yeast. Gradually mix flour from the sides into the milk until a batter about as thick as for pancakes forms. Dust the surface with plain flour and let it rise in a warm place for 30 minutes.
Chef's tip
For preparation, you will also need cling film and parchment paper.
