Preparation method
Preheat the oven to 150 °C. Line a baking sheet with parchment paper.
In a saucepan over medium heat, combine the cream, sugar, and butter and bring to a boil. Once the mixture starts boiling, reduce the heat by half, add the flour, and stir constantly until everything combines into a smooth dough and a white layer of residue starts forming at the bottom of the saucepan. However, the dough must not burn.
Transfer the dough to a stand mixer bowl and mix until cooled. Once cooled, mix in the blend of raisins, nuts, and candied fruit.
Chef's tip
Melt the chocolate in a bain-marie (water bath). Bring some water to a boil in a saucepan. Once the water starts boiling, reduce the heat to less than half and place a bowl on top of the saucepan so that it does not touch the water level. Add the chocolate to the bowl and stir. This way, the chocolate will melt smoothly and won't burn. For preparation, you will need a stand mixer with a K-beater attachment.
