Peel the black salsify and cut it into 5 cm long pieces.

In a saucepan over medium heat, bring the milk with sugar and salt to a boil. Add the black salsify to the hot milk, reduce the heat to one-third, and cook for 20 minutes until tender.

In a pan over medium heat, dry-roast the breadcrumbs until light brown and transfer to a bowl.
Chef's tip
Roast the breadcrumbs while the black salsify is cooking. This will save you time when finishing the dish. Similarly, towards the end of cooking the vegetable, have a pan with butter already prepared, into which you will directly transfer the cooked vegetable.
