Preparation method

Finely blend the nuts and mix with sugar, flour, vanilla, and salt. Add the chopped butter and egg yolk and work into a smooth and slightly sticky dough. Wrap it in cling film and let it rest in the refrigerator for 2 hours.

Preheat the oven to 180 °C and line a baking sheet with parchment paper. Roll out two long logs from the dough, then cut them into equal pieces with a knife. From each piece, roll smaller logs, then shape them into crescent shapes.

Once the entire baking sheet is ready, transfer it to the refrigerator for another 10 minutes to firm up. Place in the preheated oven and bake for 10 minutes, until the crescents are lightly golden.
