First, prepare the dough. Pour flour, sugar, salt, and lemon zest into a bowl. Add cold butter and rub with your fingers until a coarse crumble forms. Add the egg and quickly work the dough. Wrap it in foil and refrigerate, preferably overnight.

Peel the rhubarb and cut it into smaller pieces, slice the strawberries. Mix them in a bowl with sugar and vanilla sugar. Rhubarb is very sour, so add sugar to taste if necessary.

Mix flour, sugar, and butter – work into a crumble. Add almonds and mix.
