Peel and finely chop the onion. Wash the bell pepper and tomatoes and cut them into small cubes. Finely chop the parsley.
Now, heat 2 tablespoons of olive oil in a pan over medium heat, add the chopped onion and bell pepper, and sauté for 3–4 minutes over medium heat. Then add the chopped tomatoes and ground cumin, and sauté everything for another 2–3 minutes over medium heat. Next, crack 4 eggs into the pan, season the entire mixture with salt and pepper, and, stirring constantly, cook the contents of the pan for 1–3 minutes over medium heat until the eggs are properly set. Once they reach the desired consistency, stir in the chopped parsley and remove the pan from the heat.
Divide the finished scrambled eggs onto 2 plates and serve.
