Preheat the oven to 200 °C.

Wash the vegetables. Peel the onion, cut into quarters, and then slice into fine rings. Trim the end of the pointed pepper, remove the seeds, and cut into thin strips. Cut the cherry tomatoes into quarters and the spring onion into rounds. Pick the leaves from the thyme sprig and chop finely.

In a bowl, mix the pointed peppers, red onion, spring onion, cherry tomatoes, and thyme with 1 tablespoon of (olive) oil.
