Grate the Gouda on a fine grater. Peel and finely chop the onion.

Start preheating the oven to 170 °C and prepare a pie dish with a diameter of approximately 25 cm, lining it with baking paper.

Dust the work surface with 20 g of plain flour, place the puff pastry on the floured surface, and roll it out with a rolling pin into a square about 2–3 mm thick. Line the pie dish with the resulting pastry sheet so that the edges reach at least 2 cm high and the corners of the square overhang the dish.
