Preparation method
Preheat the oven to 180 °C. Grease the mold with butter and sprinkle with sugar.
Stem and pit the cherries. Slit the vanilla pod lengthwise and scrape out the seeds with the tip of a knife. Melt the butter in a saucepan over low heat.
Sift the flour into a stand mixer bowl through a fine sieve, add salt, eggs, egg yolks, sugar, vanilla bean seeds, lemon zest, and mix everything until smooth at medium speed. Slowly pour in the milk, cream, and finally the melted butter, stirring constantly.
Chef's tip
Sprinkle the Ø 30 cm mold with sugar because the sugar will caramelize during baking, adding extra flavor to the pie. Instead of cherries, you can use blueberries or figs. If you don't have a vanilla bean, use ½ teaspoon of vanilla extract in the batter.
