STEAK PROCEDURE
Let the meat rest at room temperature for 1 hour. Then season it on all sides with salt and freshly ground pepper. Pour 3 tablespoons of oil into a large plate and carefully coat the meat in it on all sides.
Preheat the oven to 160 °C.
Heat a pan over medium heat. Once it starts smoking, pour 1 tablespoon of oil into it and spread it over the entire bottom by swirling the pan.
Chef's tip
For cooking, use an oven-safe probe thermometer, a heavy cast iron or iron pan, or a pan with a sandwich bottom Ø 26–28 cm, and kitchen tongs for turning the meat. Meat prepared this way will be medium-rare, or "medium". This recipe provides temperatures for home ovens, which usually bake slightly lower by a few degrees. In professional ovens or combi steamers, bake the meat at 150 °C for 18–20 minutes or until the internal meat temperature in the oven reaches 46 °C.
