Grate the tofu together with the peeled carrots coarsely and transfer both to a bowl. Then add eggs, spelt flour, dried basil, curry powder, a pinch of salt, and a pinch of pepper to the bowl and mix everything until a smooth dough is formed.
Now prepare a large pan and heat olive oil in it. Take a spoon or ladle, and use it to gradually form smaller fritters directly in the pan from the prepared dough (approximately 4 fritters should fit in the pan at once) and fry them over medium heat for 2–4 minutes on each side. The dough should be enough for approximately 16 fritters.
Divide the cooked fritters onto serving plates and serve.
