Clean the liver and sear it quickly in lard - for about 3 minutes, then add chopped onion into small pieces and thyme. After another 3 minutes, simmer for about 5 minutes (reduce heat) under a lid.

Then remove the lid and let the water evaporate. Afterward, remove the pan from the hob and pour in the cream. Let it cool down for a while.

Then blend with an immersion blender, gradually adding cubes of butter. Blend until smooth. Season with salt and pepper.
