Preparation method

Cut the tomatoes into quarters, place them in a bowl, and lightly mash them with a fork. Finely chop the garlic and 6 basil leaves.

Heat oil and butter in a pan over medium heat, add garlic and sauté until golden. Add basil and mix. Add tomatoes and sauté for 1 minute. Season with a pinch of salt and pepper and mix. Pour in 1 tablespoon of water and mix.

Crack the eggs over the tomatoes, season with salt and pepper, and cover the pan with a lid. Bake for 3 minutes or until the egg whites are set. Transfer to a plate and garnish with the remaining basil.
