Preheat the oven to 220 °C.

Brush the eggplants with 2 tablespoons of oil, place them in the preheated oven, and bake for 20 minutes. Once partially cooled, cut the eggplants lengthwise in half, scoop out the flesh with a spoon into a bowl, and let it cool. Then chop it coarsely.

Reduce the oven temperature to 160 °C, add the hazelnuts, and bake for 15 minutes. Then let them cool and chop them coarsely as well.
Chef's tip
You will need a blender to prepare this soup. Instead of water, you can use vegetable broth. The soup will have a more pronounced flavor.
