Cut out the tough core from the cabbage and slice the leaves into fine strips. Grate the carrots coarsely and set aside.

In a large bowl, mix the cabbage, salt, and sugar. Squeeze the seasoned cabbage with your hand to partially tenderize it. Add horseradish and mix. In a separate bowl, mix mayonnaise and vinegar, then add to the cabbage. Mix. Finally, add the carrots and mix.

Chill in the refrigerator and mix before serving.
Chef's tip
Add carrots at the very end to prevent them from coloring the salad red.
