Ingredients for Balls and Sauce

  • 300 g fresh salmon
  • 40 g breadcrumbs
  • 1 pc egg
  • 1 pc spring onion
  • 4 teaspoons Dijon mustard (1 for balls, 3 for sauce)
  • salt to taste
  • freshly ground pepper
  • oil for frying and spraying
  • 1 pc yellow onion
  • 200 ml vegetable broth
  • 80 g cream cheese or other cream cheese
  • 100 ml cooking cream 12%

Side Dish

  • mashed potatoes for serving

Preparation of Balls

    Preheat the oven to top and bottom heat and set to 190 °C. Skin the salmon, cut it into cubes, and briefly chop in a blender. Add egg, breadcrumbs, and chopped spring onion. Season with salt and pepper. Mix well and form into balls, placing them on a baking sheet lined with parchment paper. Spray with oil and bake for 15–18 minutes.

Preparation of Sauce and Serving

    Finely chop the onion. Heat oil in a pan and sauté the onion until translucent. Add broth and the remaining sauce ingredients (cream cheese, cream, mustard). Heat through and blend with an immersion blender. Continue to cook the sauce over low heat and reduce to the desired consistency. Serve the balls with the sauce and mashed potatoes.
