Ingredients
- 4 pcs pears
- 3 pcs eggs
- 200 ml milk
- 160 g plain flour
- 2 tbsp cane sugar
- 1 tsp cinnamon
- 1 pc vanilla pod
- 1 tsp lemon zest
- 1/2 tsp baking soda
- pinch of salt
- oil for frying
- 250 g mascarpone
- 2 tbsp powdered sugar
- candied rose petals for garnish
Preparation and Frying
- 1Wash the pears, remove the cores, and cut into thicker slices.
- 2In a bowl, whisk 2 eggs with milk, add flour, cane sugar, cinnamon, seeds from the vanilla pod, lemon zest, baking soda, and salt. Mix until a smooth, thicker batter, similar to pancake batter, is formed.
- 3Heat a thin layer of oil or butter in a pan. Gradually dip the pear slices into the batter so they are fully coated, and immediately place them in the pan.
- 4Fry on both sides until golden brown, until the batter forms a fluffy 'robe'.
- 5Whip the mascarpone with powdered sugar and the remaining egg yolk until a fine foam is formed. Serve the finished pears sprinkled with powdered sugar, with mascarpone foam, and garnished with candied rose petals.
