Preparation method
First, take a large pot, pour enough water into it for cooking pasta, salt it, and bring it to a boil over high heat. Once the water starts boiling, add the pasta to the pot and cook for 17–18 minutes over medium heat.
Meanwhile, prepare the zucchini sauce: Peel and finely chop the onion and garlic. Cut the zucchini into smaller cubes. Then, take a large pan and heat the olive oil in it over medium heat. Once the oil is hot, add the chopped onion, chopped garlic, and zucchini cubes to the pan and sauté for 4–5 minutes over medium heat. Afterward, pour water into the pan, season with salt and pepper, and cook for 7–8 minutes over medium heat.
Drain the cooked pasta. Finely grate the Parmesan. Once the zucchini in the pan softens, transfer the mixture from the pan to a tall blending container, pour in the cooking cream, add the grated Parmesan and fresh basil, and blend everything until smooth with an immersion blender. Pour the blended mixture back into the pan, add the drained pasta, and season with salt and pepper.
Chef's tip
Before serving, sprinkle individual portions with finely grated Parmesan and garnish with a few basil leaves.
