INGREDIENTS

  • 100 g couscous, dry
  • 300 g chicken breasts
  • 1 tablespoon olive oil
  • 60 g yellow onion (sliced)
  • 50 ml orange juice
  • 20 g tomato paste
  • 1 teaspoon chili
  • 1 small handful fresh mint (roughly chopped)
  • 10 g peeled almond flakes
  • 2 tablespoons pomegranate seeds
  • Salt
  • Pepper
  • 100 ml water (boiling)

METHOD

    Pour the couscous into a large bowl, season with salt, pour boiling water over it, and cover the bowl with cling film.

    Wash, pat dry, and cut the chicken breasts into thin strips. Heat a pan with oil over high heat, add the meat, and sauté over high heat for 2–3 minutes, stirring occasionally. Then add the onion and sauté for another 2–3 minutes.

    Meanwhile, in a small bowl, mix orange juice, tomato paste, chili, salt, and pepper. After sautéing the ingredients in the pan, turn off the heat and pour the prepared mixture into the hot pan.

    Finally, add the meat mixture to the bowl with couscous, mix, and divide into individual portions. Sprinkle each with mint, almond flakes, and pomegranate seeds and serve.
