First, clean the turkey breast, season with salt and pepper. Grill or pan-fry for about 8-10 minutes on each side until beautifully cooked through. Then let the meat cool down and slice it thinly.
While the meat is cooling, prepare the vegetables and fruit. Remove the tough and stringy skin from the celery, slice it thinly. Core the apples and cut them into cubes. To prevent the apples from browning, immediately drizzle them with half of the lemon juice. Halve the grapes. In a pan, melt the cane sugar with a drop of water and toast the walnuts in the resulting caramel.
Then, in a bowl, mix mayonnaise, sour cream, and the rest of the lemon juice. Season with salt and pepper.
