Preparation method
If using leftover pasta, simply bring it to room temperature. If preparing fresh pasta, cook it according to package instructions and let it cool.
In a bowl, whisk the eggs with grated Parmesan. Add diced mozzarella, ham (if using), and chopped onion. Add the cooked pasta to the egg mixture and mix well to combine all ingredients. Season with salt and pepper to taste.
In a medium-sized pan, heat olive oil over medium heat. Pour the pasta and egg mixture into the pan and spread it evenly. Fry the frittata over medium heat for 5-7 minutes, until the bottom is golden brown and the top begins to set.
