  • 200 g fresh broccoli
  • 1 medium red bell pepper (approx. 150 g)
  • 2 cloves of garlic
  • 2 tablespoons of olive oil
  • 6 eggs size M
  • Salt
  • Pepper

INSTRUCTIONS

    First, preheat the oven to 180⁠–⁠185 °C and prepare a silicone mold for 12 muffins.

    Wash the broccoli and cut it into small florets, wash the bell pepper and cut it into small cubes, and peel and finely grate the garlic.

    Next, prepare a large bowl, into which add the chopped broccoli, bell pepper, grated garlic, 2 tablespoons of olive oil, 6 eggs, salt, and pepper. Thoroughly mix the entire contents of the bowl with a whisk and fill the depressions in the prepared muffin mold with the resulting mixture to ¾ of their volume.

    Place the filled mold into the preheated oven and bake the muffins for 30⁠–⁠35 minutes at 180⁠–⁠185 °C.

    After baking, remove the mold, let the muffins cool for a while, and then serve.
