  • 400 g cauliflower
  • 1 handful fresh parsley
  • 2 cloves garlic
  • 3 eggs size M
  • 180 g wholemeal spelt plain flour
  • 1 tablespoon dried marjoram
  • Salt
  • Pepper

    Bring about 1 liter of salted water to a boil in a pot. Meanwhile, break the cauliflower into smaller florets. Once the water boils, add the cauliflower florets and cook them for 7–8 minutes over high heat until softened. In the meantime, finely chop the parsley and peel the garlic. Then drain the cooked cauliflower, cool it under cold water, and mash it into small pieces with a potato masher in a large bowl.

    Now preheat the oven to 190–195 °C and line a baking sheet (30 cm × 40 cm) with parchment paper. Press the peeled garlic into the bowl with the cauliflower, add the eggs, spelt flour, dried marjoram, chopped parsley, salt, and pepper, and mix everything. Form patties from the resulting dough, about 10 cm in diameter and 2 cm high, and place them on the lined baking sheet. Once all the dough is processed, put the baking sheet into the oven and bake for 40–45 minutes at 190–195 °C. Serve the baked patties immediately.
