Ingredients

  • 150 g defrosted raspberries (you can also use fresh)
  • 20 g honey
  • 20 g chia seeds
  • 100 g dark chocolate
  • 1 teaspoon coconut oil

Instructions

    First, line a plate or tray with parchment paper. Then, in a medium bowl, mash the defrosted raspberries, honey, and chia seeds with a fork, and let the resulting mixture stand for 10⁠–⁠20 minutes to slightly firm up. From the firmed-up mixture, use a spoon to create 10 equally sized mounds on the lined plate or tray, and place the plate or tray in the freezer for at least 1 hour.

    After the specified time, melt the chocolate with 1 teaspoon of coconut oil over a double boiler* and coat all the frozen raspberry pieces in the melted mixture. Let the chocolate-covered raspberries firm up for another 1⁠–⁠2 minutes and serve.
