Crack 2 eggs into a large bowl, add the quark, and mix thoroughly. Add the flour to the resulting mixture and knead into a firm, elastic dough, then let it rest in the bowl for 10 minutes.
Meanwhile, wash the strawberries and remove their stems. Then, fill a large pot with 2–3 l of water and start heating the water over high heat.
From the rested dough, start cutting off pieces weighing approximately 60–63 g and shape them into balls. From each ball, form a flat disc about 1 cm thick, place a strawberry in the center of the disc, and wrap the dough around it to form a firm ball again.
Chef's tip
Alternatively, you can first cook the dumplings, cool them in a bowl of cold water, and then pan-fry them over medium heat for 6–7 minutes with melted butter.
