For the sorbet, use well-ripened fruit. Wash and pit the apricots. Cut each apricot into eighths and place everything into a freezer bag. Put it in the freezer and let the apricots freeze completely.

Once prepared this way, the apricots can be used anytime to make a quick sorbet. For this, prepare a stand blender, into which you place the frozen apricots along with vanilla extract and chicory syrup. If the mixture is too sour, add more chicory syrup to taste. Blend everything together until smooth and serve immediately.
