Preparation method
First, prepare the sweet potato puree. Peel, clean, and dice the sweet potatoes. Bring 1.5 l of water to a boil in a pot, add the diced sweet potatoes, and cook for approximately 15–20 minutes. After this time, drain the sweet potatoes and blend until smooth. The stated amount of ingredients will yield approximately 600 g of puree.
Cook the pasta in salted boiling water according to package directions and drain. The cooking time for rice pasta varies depending on its type and size, but usually ranges between 5 and 10 minutes.
Prepare a pot and transfer the sweet potato puree into it. Add the rice cream, stir, and simmer for 5 minutes over low heat. Then add the grated cheddar and stir until the cheddar melts. At this point, remove the pot from the heat, season the sauce with salt and pepper, and stir in the cooked pasta.
Chef's tip
*The original mac ‘n’ cheese recipe uses elbow macaroni or macaroni. However, you can substitute them with another type of pasta – for example, rye or whole wheat. Just keep in mind that the cooking time will then differ.
