  • 1 head of cauliflower
  • 20 g coconut oil in solid state (olive oil or ghee can be used)
  • 1 clove of garlic (crushed)
  • 2 tablespoons tomato paste
  • ½ teaspoon dried chili
  • 1 teaspoon dried rosemary
  • 100 g canned coconut milk
  • Salt

METHOD

    Divide the cauliflower into florets and wash.

    Heat the coconut oil in a pan over medium heat.
  • 3
    Add the cauliflower florets and sauté for at least 20 minutes over medium heat.

    Stir in the crushed garlic clove for the last 1 minute.
  • 5
    Add tomato paste, chili, and rosemary and sauté for 2 minutes over medium heat.

    Pour in the coconut milk and let it simmer for another 5 minutes.

    Season with salt to taste.
Tip
Serve alone or with rice or pasta. You can garnish the finished dish with a few fresh parsley leaves.
