INSTRUCTIONS FOR ONION CHUTNEY
Peel the onion, cut it in half, and slice it thinly.
Heat olive oil in a deep pan. Sauté the onion in the oil until translucent. Add a tablespoon of sugar to the pan. Once the sugar lightly caramelizes, pour in the cognac and let the alcohol evaporate for a while.
Then add the rest of the spices and let it simmer over low heat until half of the liquid has evaporated. Finally, stir in a teaspoon of honey and season with salt to taste.
Chef's tip
You can consume the onion chutney warm or cold. It will last about 3 days in the refrigerator. As a side dish, we recommend grilled vegetables, asparagus, or a fresh vegetable salad.
